Their winemaking technique is an expression of the single-vineyard Barossa Valley sites and the purity of our fruit. They handpick all the grapes, then crush and ferment in their on-site boutique winery. Depending on the season, they often ferment with a portion of whole bunches to increase the perfume and complexity of the wines. They believe that this technique adds energy and freshness to the wines.
